Fiber and Antioxidants Reduce Coronary Heart Disease Risk

A recent study out of the United Kingdom confirms that a diet high in fiber and antioxidant vitamins reduces the risk of Coronary Heart Disease, or CHD, and deaths from all causes in men. Women; however, appeared to benefit only from a high-fiber diet. The study was conducted by the University of Reading and looked at men and women between the ages of 40 and 59.

It is thought that that the stool-bulking properties of a high fiber diet play a role in the reduction of CHD and mortality. In addition, higher fiber fruits and vegetables contain higher levels of folate, the antioxidant-active flavonoids, and minerals such as selenium, magnesium, and copper. For men, vitamins E, C and beta-carotene had the greatest antioxidant benefit.
